Sesame-crusted salmon with Asian greens

Ingredients:
  • 37.50 gm sesame seeds
  • 4 (180g each) salmon fillets, skin off
  • 18.40 gm vegetable oil
  • 76.25 gm oyster sauce
  • 21.00 gm soy sauce
  • 2 tsp Chinese sesame oil
  • 10.00 gm caster sugar
  • 2 baby bok choy, halved lengthways
  • 1 bunch baby choy sum, cut into 8cm lengths
Instructions:
  • Coat one side of the salmon with sesame seeds by pressing the salmon into the seeds on a plate.
  • In a heated frying pan with oil, cook salmon, starting with the skin side down, until golden brown, about 2 to 3 minutes. Flip the salmon and continue cooking for another 2 to 3 minutes or until it reaches your desired level of doneness.
  • In a saucepan over gentle heat, mix together oyster sauce, soy sauce, sesame oil, and sugar. Stir well for about a minute until warmed through.
  • Simultaneously blanch bok choy and choy sum in a pot of boiling water for 30 seconds until tender. Drain well.
  • Arrange the bok choy and choy sum on plates. Place the salmon on top. Drizzle with the sauce mixture and serve.
