Irresistible dinner: Lemon and herb crusted salmon with buttery greens.
Ingredients:
  • 500g salmon
  • 80ml olive oil
  • 80g butter, chopped
  • 100g brussels sprouts, halved
  • 1 bunch baby broccoli, halved lengthways
  • 100g green beans, halved lengthways
  • 2 x 350g tubs Cheddar Mash
Instructions:
  • Preheat your oven to a toasty 180°C and prepare your baking tray with a cozy layer of baking paper.
  • In a shallow bowl, combine the crumbs from the salmon packet with oil. Mix well. Place the salmon, skin-side up, in the bowl and coat the sides (avoid coating the skin side). Transfer the salmon, skin-side down, to a lined tray. Bake for 15 minutes or until cooked through.
  • In a large frying pan, melt the butter until bubbly. Add brussels sprouts and cook for 5 minutes, turning occasionally. Mix in the baby broccoli and cook for 3 minutes or until tender. Finally, add the beans and cook for 2 more minutes until all vegetables are cooked through. Serve in a dish.
  • Prepare the mash according to the packet instructions, then transfer it to a serving dish.
  • Serve the salmon alongside cheddar mashed potatoes and baby broccoli. Season to taste.
