Elevate your pork roast with a zesty homemade rub using lemon zest and fresh herbs for extra flavor and a delicious crust.
Ingredients:
  • 1 (2 1/2 pound) boneless pork sirloin roast
  • 3 tablespoons olive oil
  • 2 teaspoons minced garlic
  • 2 teaspoons chopped fresh thyme
  • 2 teaspoons chopped fresh sage
  • 2 teaspoons finely grated lemon zest
  • 1.5 teaspoons chopped fresh rosemary
  • 1 teaspoon sea salt
  • 1 teaspoon coarsely ground black pepper
Instructions:
  • Allow the roast to sit at room temperature for 30 minutes before cooking.
  • Preheat the oven to a toasty 350 degrees F (175 degrees C) for perfect baking.
  • Mix together olive oil, garlic, thyme, sage, lemon zest, rosemary, salt, and pepper in a small bowl. Coat the roast evenly with the rub mixture. Transfer the roast onto a rack in a roasting pan.
  • Roast in the preheated oven for 45-60 minutes until the center is slightly pink, reaching an internal temperature of at least 150°F (66°C) when checked with an instant-read thermometer.
  • Take out of the oven and cover lightly with foil. Let it rest for 10 to 15 minutes before slicing.
