Herbed Pork Loin Roast

Herb-crusted pork loin roast, a show-stopping Thanksgiving main dish.
Ingredients:
  • 1 boneless pork loin roast (1 1/2 lb), trimmed of fat
  • 1/2 teaspoon olive oil
  • 3 tablespoons chopped fresh sage leaves
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh oregano leaves
  • 4 1/2 teaspoons chopped fresh chives
  • 1/2 teaspoon freshly ground pepper
Instructions:
  • Preheat the oven to 375°F and generously spray a broiler pan with cooking spray.
  • Coat the pork with oil, then combine the remaining ingredients in a small bowl. Rub the mixture over the pork, place it on a rack in a pan, and insert an ovenproof meat thermometer into the thickest part of the pork, making sure it doesn't touch the fat.
  • Roast for 1 hour uncovered until thermometer reaches 145°F. Then, lightly cover with foil and rest for at least 3 minutes before serving.
