Herb-Crusted Pork Tenderloin

Perfect for entertaining: quick-roasting, easy-to-serve beef tenderloins.
Ingredients:
  • 2 pork tenderloins (about 3/4 lb each)
  • 1 cup soft bread crumbs (about 1 1/2 slices bread)
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons chopped fresh or 1/2 teaspoon dried thyme leaves
  • 1 tablespoon olive or vegetable oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon fennel seed
  • 1/4 teaspoon coarsely ground pepper
  • 2 cloves garlic, finely chopped
Instructions:
  • Preheat oven to 450°F and generously coat a shallow roasting pan and rack with cooking spray. Arrange pork tenderloins on the prepared rack in the pan.
  • Combine all remaining ingredients in a small bowl. Spread the herb mixture evenly over the pork. Insert an ovenproof meat thermometer into the thickest part of the pork and loosely cover with foil.
  • Bake covered for 20 minutes, then uncover and bake for an additional 10 to 15 minutes until the thermometer reads 155°F. Loosely cover the pork with foil and let it rest for 10 to 15 minutes until the thermometer reads 160°F. This resting period will allow the temperature to rise by 5°F and make the pork easier to carve.
