Ingredients:
  • 82.50 ml chopped fresh continental parsley
  • 82.50 ml chopped fresh mint
  • 2 tsp finely grated orange rind
  • 36.40 gm olive oil
  • Salt & freshly ground pepper
  • 2 x 900g (4 cutlets each rack) pork rack
  • 1 kg sweet potato, peeled, chopped
  • 250g snow peas, trimmed
  • 150g pea
Instructions:
  • Preheat your oven to 180°C and line a baking tray with non-stick baking paper. Mix parsley, mint, orange rind, and oil together. Season with salt and pepper. Trim the top layer of fat from the pork racks. Rub the herb mixture onto the racks evenly. Bake for 50 minutes, then cover with foil and rest for 15 minutes before slicing into cutlets. Enjoy!
  • Boil the sweet potato in a saucepan until soft, then drain and mash it.
  • 1. Bring a saucepan of water to a boil, then add snow peas and cook for 1 minute. Next, add peas and cook for 1 more minute until tender, then drain.
  • Plate the pork alongside the sweet potato mash and steamed peas for a delicious presentation.
