Herb-crusted pork chops baked in wine, topped with rich homemade gravy for a delicious main course.
Ingredients:
  • 0.5 cup all-purpose flour
  • 1 teaspoon ground mustard
  • 1 teaspoon paprika
  • 0.5 teaspoon cayenne pepper
  • 0.25 teaspoon celery salt
  • 0.25 teaspoon ground ginger
  • 0.125 teaspoon dried oregano
  • 0.125 teaspoon dried basil
  • 1 pinch ground black pepper
  • 2 (1-inch thick) bone-in pork loin chops
  • 1.5 teaspoons vegetable oil
  • 0.75 cup dry sherry
  • 0.75 cup water
  • 2 tablespoons packed brown sugar
  • 0.25 cup heavy whipping cream
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease a 9x14-inch baking dish.
  • Combine flour, garlic powder, mustard, paprika, cayenne pepper, celery salt, ground ginger, oregano, basil, salt, and pepper in a shallow dish, creating a flavorful blend of aromatic spices.
  • Coat the pork chops with the flour mixture, making sure to save the extra flour mixture for later.
  • In a skillet over medium heat, sizzle pork chops in olive oil until nicely browned for 3 to 5 minutes on each side. Place the pork chops in a baking dish, keeping all the flavorful drippings in the skillet.
  • Combine the sherry, water, and brown sugar until the sugar is fully dissolved, then generously drizzle the mixture over the succulent pork chops.
  • Place the pork chops in a preheated oven and bake until they are tender, no longer pink in the center, and reach an internal temperature of 145 degrees F (63 degrees C), which should take about 40 to 45 minutes. Once done, transfer the pork chops to a plate and cover them with aluminum foil to keep warm. Pour the cooking liquid from the baking dish into a skillet along with the reserved drippings.
  • Heat the skillet with drippings over medium-low heat. Stir in cream until well combined. Gradually add reserved flour mixture, stirring continuously until the mixture thickens. Serve the gravy with the pork chops.
