Spiced pork chops with green beans and tomatoes, a delicious and versatile meal perfect over rice, pasta, or potatoes.
Ingredients:
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper, or to taste
  • 4 boneless pork chops, about 3/4-inch thick
  • 1 tablespoon vegetable oil, or more to taste
  • 1 onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 pound fresh green beans, trimmed
  • 2 large tomatoes, diced
  • 0.5 cup chicken broth
Instructions:
  • Combine cinnamon, cumin, salt, and pepper in a bowl and generously season both sides of the pork chops with the mixture.
  • In a large pan, heat oil over medium heat. Brown pork chops for 3 to 4 minutes on each side. Remove pork chops from the pan. Cook onions until translucent, about 2 minutes. Add garlic and cook for 30 to 60 seconds. Stir in green beans and cook for 2 minutes. Finally, add tomatoes and chicken broth, and simmer for about 5 minutes.
  • Place the pork chops back in the pan, cover, and simmer on low heat until they are cooked through and reach an internal temperature of 145°F (63°C) on an instant-read thermometer, which should take around 15 to 20 minutes. Season with salt and pepper to taste before serving.
