Grilled Wild Rice-Stuffed Pork Chops

Tender chops glazed with apricot preserves, cinnamon, and choice of white wine or apple juice.
Ingredients:
  • 1 teaspoon butter or margarine
  • 1/3 cup finely chopped celery
  • 1 medium green onion, finely chopped (1 tablespoon)
  • 1 cup cooked wild rice
  • 1 tablespoon sliced almonds
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 pork loin chops, 1 inch thick (2 1/2 lb)
  • 1/3 cup apricot preserves
  • 1 tablespoon dry white wine or apple juice
  • 1/8 teaspoon ground cinnamon
Instructions:
  • Preheat grill. Melt butter in a skillet over medium heat. Sauté celery and onion until celery is crisp-tender. Mix in rice, almonds, salt, and pepper until combined.
  • Make a deep horizontal pocket in the meatiest side of each pork chop by the bone. Fill each pocket with approximately 1/3 cup of stuffing and secure the openings with toothpicks. In a small bowl, combine apricot preserves, wine, and cinnamon.
  • Grill the pork over medium-low heat for 40 to 45 minutes, brushing with the preserves mixture and turning occasionally, until tender and slightly pink near the bone on the unstuffed sides of chops. Remove toothpicks and discard any extra preserves.
