Whip up a quick and delicious Japanese noodle salad with fresh veggies and ready-made ingredients.
Ingredients:
  • 270g pkt soba noodles
  • 160g corn cob
  • 200g frozen edamame or broad beans
  • 48.00 gm Japanese Style Miso & Sesame Salad Dressing
  • 250g smoked salmon, torn
  • 1 red onion, thinly sliced
  • 70g ginger
  • 150g pkt Coles Australian Superfood Leaf Blend
Instructions:
  • Boil noodles in a large saucepan following packet directions. Add corn for the last 2 minutes of cooking. Drain, rinse with cold water, then transfer to a large bowl.
  • While the edamame or broad beans are cooking in boiling water as per packet instructions, refresh them under cold water, peel, and add them to the noodle mixture in the bowl with the salad dressing. Toss to combine.
  • Plate the noodle mixture with the salmon, salad leaves, onion, and pickled ginger, then season before serving.
