Simplify weeknight dinners with this delicious suggestion.
Ingredients:
  • 270g dried soba noodles
  • 1 bunch asparagus, cut into 3cm pieces
  • 1/2 bunch watercress, cut into small sprigs
  • 175g smoked salmon portion, flaked
  • 1 Lebanese cucumber, halved lengthways, sliced
  • 4 green onions, thinly sliced
  • 40.00 ml chilli soy noodle sauce
Instructions:
  • Cook the noodles in a pot of boiling salted water for 2 minutes, then add the asparagus. Bring back to a boil and cook for 2 to 3 minutes until both the noodles and asparagus are tender. Drain and cool under cold water before draining again.
  • Combine noodles with watercress, salmon, cucumber, onion, and sauce in a large bowl. Season with salt and pepper, toss gently, and serve.
