Whip up a quick and delicious wok-fried salmon with soba noodles for dinner!
Ingredients:
  • 20.00 ml grated ginger
  • 20.00 ml sesame oil
  • 60ml tamari
  • 600g skinless salmon fillets, pin-boned, cut into 3cm pieces
  • 36.80 gm sunflower oil
  • 1/2 bunch spring onions, sliced on an angle
  • 60ml mirin
  • 2 bunches broccolini, stalks halved lengthways
  • 120g edamame beans
  • 270g soba noodles, cooked to packet instructions, drained
  • 6.00 gm sesame seeds
Instructions:
  • Create the marinade by mixing ginger, sesame oil, and 2 tablespoons of tamari in a bowl. Add the salmon and gently toss to ensure it's coated evenly. Let it marinate for 10 minutes.
  • In a sizzling wok, swirl 2 tsp sunflower oil, then sear half of the salmon for 2-3 minutes until perfectly cooked, flipping halfway through. Remove and cook the remaining salmon in another 2 tsp oil. Rest all the salmon under foil for 5 minutes before serving.
  • Drizzle the remaining 1 tablespoon of oil into the wok with the spring onion and stir-fry for 2 minutes. Pour in rice wine, broccolini, edamame, the remaining 1 tablespoon of tamari, and 1/4 cup (60ml) of water. Keep stirring for 3-4 minutes until the liquid reduces slightly. Combine the noodles with the salmon and any juices, tossing to warm through. Finish by sprinkling sesame seeds on top before serving.
