Elevate your salmon and soba noodles with creamy avocado for a unique twist.
Ingredients:
  • 270g packet dried soba noodles
  • 150g snow peas, thinly sliced diagonally
  • 30.00 ml mirin (Japanese rice wine)
  • 30.00 ml rice wine vinegar
  • 21.00 gm soy sauce
  • 4.00 gm brown sugar
  • 1 tsp sesame oil
  • 1cm piece fresh ginger, peeled, grated
  • Canola oil cooking spray
  • 200g salmon fillet, skin intact
  • 1 medium red capsicum, thinly sliced
  • 1 Lebanese cucumber, cut into ribbons
  • 2 green onions, thinly sliced diagonally
  • 1 large avocado, halved, deseeded, peeled, finely diced
Instructions:
  • Boil noodles in a large saucepan for 4 minutes, adding snow peas in the last minute, until tender. Drain and rinse under cold water.
  • In a bowl, mix together mirin, vinegar, soy sauce, sugar, sesame oil, and ginger. Let it sit for a moment.
  • Prepare a hot frying pan coated with oil over medium-high heat. Sear the salmon for 2 to 3 minutes per side for medium doneness or until preferred. Plate the cooked salmon and use 2 forks to flake it, discarding the skin.
  • Combine capsicum, cucumber, onion, salmon, mirin mixture, and half of the avocado with the noodle mixture. Gently toss to mix well. Serve with the remaining avocado on top.
