Broccolini and soba noodle salad with wasabi dressing and ginger salt

Quick and healthy main dish for two ready in just 20 minutes!
Ingredients:
  • 2 bunches broccolini, sliced lengthways
  • 120g edamame beans
  • 42.00 gm soy sauce
  • 18.20 gm peanut oil
  • 1 tsp wasabi paste
  • 20.00 ml mirin
  • 14.40 gm sea salt flakes
  • 2 tsp ginger, very finely chopped
  • 180g soba noodles, cooked according to packet instructions, drained
  • 1 avocado, sliced
Instructions:
  • Bring water to a gentle boil, add eggs and cook for 6 minutes for soft-boiled or until desired doneness. Drain, cool under cold running water, peel, and set aside.
  • In a pot of boiling water, blanch the broccolini until just tender for about 2 minutes. Then add the edamame and heat through for an additional minute. Drain and set aside.
  • Combine soy sauce, peanut oil, wasabi, and mirin in a bowl. Whisk until well blended. Set aside.
  • Combine the salt and ginger in a small bowl, then rub together using your fingers to create the ginger salt.
  • Combine the soba noodles, broccolini, and avocado in a large bowl, then generously drizzle with the zesty wasabi dressing. Quarter the eggs and arrange them on top of the noodles. Finish off with a sprinkle of tantalizing ginger salt before serving.
