Roasted broccolini with sesame miso butter

Whip up a flavorful Asian noodle salad with broccolini, soba noodles, edamame, and a delicious miso dressing that will be a hit with all!
Ingredients:
  • Lemon wedges, to serve
  • 1 bunch broccolini, trimmed, halved lengthways
  • 50g butter, softened
  • 12.00 gm white miso paste
  • 1cm piece fresh ginger, peeled, finely grated
  • 6.00 gm sesame seeds, toasted, plus extra to serve
  • 250.00 ml frozen shelled edamame, thawed
  • 180g dried soba noodles
  • Sliced green onion, to serve
Instructions:
  • Preheat the oven to 200C/180C fan-forced. Line a large baking tray with sides with baking paper and arrange the broccolini in a single layer on the tray.
  • Combine butter, miso paste, ginger, and sesame seeds in a small bowl, mashing with a fork until well mixed.
  • Brush broccolini with a flavorful butter mixture. Roast for 10 minutes, then add edamame halfway through cooking.
  • Cook the noodles in a saucepan of boiling water according to the package instructions, then drain thoroughly.
  • Combine noodles with broccolini mixture in a serving dish. Toss together thoroughly. Sprinkle with green onion and additional sesame seeds. Accompany with a side of lemon.
