Enhance stir-fry with sweet and crunchy pear.
Ingredients:
  • 2 x 200g chicken breasts, thinly sliced widthwise
  • 95g (1/4 cup) char siu sauce (see note)
  • 3 tsp Chinese five-spice
  • 270g packet soba noodles (see note)
  • 60ml (1/4 cup) vegetable oil
  • 2 cloves garlic, crushed
  • 1cm piece ginger, finely grated
  • 1 red onion, cut into thin wedges
  • 1 bunch broccolini, trimmed, cut into 3cm pieces on the diagonal
  • 80g (1 cup) finely shredded red cabbage
  • 1 large firm packham pear, cut into julienne (matchsticks)
  • Sliced long red chillies (optional), to serve
Instructions:
  • Combine chicken, char siu sauce, five-spice, salt, and pepper in a bowl. Allow to marinate at room temperature for 15 minutes.
  • Cook the noodles in a pot of boiling salted water for 2 1/2 minutes until al dente, then drain and rinse with cold water.
  • In a large wok over high heat, heat oil until shimmering. Stir in garlic, ginger, and onion, cooking for 3 minutes until onion is softened. Toss in chicken and stir-fry for 6 minutes until lightly browned. Add broccolini and cook for 3 minutes until tender. Introduce cabbage and noodles to the wok, stir-frying for 1 1/2 minutes until noodles are heated through.
  • Combine the sliced pear with the noodles, mix well. Serve the noodles in individual bowls.
