Beef and soba noodle salad

Vibrant veggies paired with herb-crusted roast beef and noodles create an enticing Asian salad.
Ingredients:
  • 90g organic dried soba noodles
  • 1 large carrot, peeled, cut into matchsticks
  • 1/2 bunch broccolini, cut into 5cm lengths
  • 60g baby corn, thinly sliced diagonally
  • 50g baby Asian salad leaves
  • 150g Herb-crusted roast beef, thinly sliced
  • 125.00 ml fresh coriander leaves
  • 80ml (1/3 cup) Soy & Chilli Dressing
Instructions:
  • Boil the noodles for 2 minutes. Cook the carrot, broccolini, and corn until tender. Drain and transfer to a serving bowl. Add salad leaves, beef, coriander, and dressing. Toss together and serve.
