Satisfying Japanese noodle salad, perfect as a main or side dish.
Ingredients:
  • 4 x 150g beef fillet steaks
  • Olive oil, to brush
  • 200g green tea soba or regular soba noodles (see notes)
  • 2 tsp sesame oil
  • 75.00 gm (3 tbsp) miso paste (see notes)
  • 80ml mirin
  • 4 spring onions, trimmed, thinly sliced on the diagonal
  • 6.00 gm sesame seeds, lightly toasted
Instructions:
  • Brush the steaks with oil and generously season them. Heat a large frypan or chargrill pan over high heat. Sear the steaks for 3 minutes on each side for rare (or until cooked to your preference). Remove the steaks, tent them loosely with foil, and let them rest for 5 minutes.
  • Cook noodles according to the packet instructions. Rinse under cold water, drain, and toss with sesame oil in a large bowl. Set aside.
  • In a small pan over medium heat, combine miso and mirin, whisking until smooth and heated. Slice steaks thinly on an angle, then mix with noodles, miso dressing, and spring onion. Top with sesame seeds before serving.
