Elevate your dinner routine with a delicious spin on beef and mushrooms.
Ingredients:
  • 20g dried porcini mushrooms
  • 250ml water
  • 1 brown onion, thinly sliced
  • 200g brown mushrooms, thickly sliced
  • 200g cup mushrooms, thickly sliced
  • 4 No Added Hormones Beef Scotch Fillet Steaks
  • 125ml brandy
  • 7.50 gm ground paprika
  • 22.20 gm tomato paste
  • 23.40 gm Dijon mustard
  • 24.40 gm Worcestershire sauce
  • 300g sour cream
  • Steamed green beans, to serve
Instructions:
  • In a small heatproof bowl, combine porcini mushrooms and boiling water. Let it soak for 20 minutes.
  • Heat half of the oil in a large frying pan until shimmering. Cook the onion, stirring occasionally, for about 5 minutes until softened. Stir in the garlic for about 1 minute until fragrant. Transfer the mixture to a heatproof bowl.
  • Heat oil in a pan over high heat. Add mushroom and cook for 5 minutes until golden brown and tender. Add to the bowl with the onion.
  • In the same pan, heat the remaining oil until it shimmers. Generously season the steaks, then sear them for 2-3 minutes on each side for a perfect medium-rare, or until your preferred level of doneness. Place the steaks on a plate and tent loosely with foil.
  • Pour the brandy, wine, or stock into the pan and stir with a wooden spoon to incorporate, while scraping the bottom of the pan. Cook until the liquid is reduced by half, about 2 minutes. Introduce the porcini mushrooms and their liquid, bringing to a boil. Let it simmer for 4 minutes or until the mixture is reduced by half. Mix in the onion mixture, paprika, tomato paste, mustard, and Worcestershire sauce. Cook until well combined and heated through, about 2 minutes. Finally, add the sour cream and cook until the sauce slightly thickens and boils, about 2-3 minutes. Remove from heat and add the steaks, coating them in the sauce before serving.
  • Serve immediately with steamed green beans to enjoy the dish at its best.
