Teriyaki beef and soba noodle bowl

Indulge in a comforting bowl of noodles to chase away the winter chill.
Ingredients:
  • 270g packet soba noodles
  • 9.20 gm vegetable oil
  • 500g beef mince
  • 2 green onions, thinly sliced, plus extra to serve
  • 2cm piece fresh ginger, finely grated
  • 100g sachet teriyaki beef ready sauce
  • 1 large carrot, cut into matchsticks
  • 1 red capsicum, cut into matchsticks
  • 1 Lebanese cucumber, cut into matchsticks
  • 1/2 iceberg lettuce, roughly shredded
  • 12.00 gm sesame seeds, toasted
  • Extra wasabi (optional), to serve
  • 2 tsp wasabi paste
  • 2 tsp sesame oil
  • 42.00 gm lime juice
Instructions:
  • Prepare the noodles according to package instructions, then drain them.
  • Heat a wok or large frying pan over medium-high heat. Add oil and swirl to coat. Cook the mince, breaking it up with a wooden spoon for 3 to 4 minutes until browned. Add onion, garlic, and ginger, and stir-fry for an additional 2 minutes. Pour in the sauce and stir-fry for another 2 to 3 minutes until heated through. Remove from heat.
  • Prepare the Wasabi Dressing: Whisk together wasabi, oil, lime juice, and 2 teaspoons of water in a jug using a fork. Season the dressing with salt and pepper to taste.
  • Place noodles in a serving bowl and drizzle half of the dressing over them. Mix well to ensure the noodles are coated. Distribute the dressed noodles evenly among individual serving bowls. Layer with the mince mixture, carrot, capsicum, cucumber, and lettuce. Garnish with sesame seeds and additional onion. Serve alongside the remaining dressing and optional extra wasabi.
