Teriyaki Beef and Pineapple Lettuce Wraps

Ingredients:
  • 1 lb lean (at least 80%) ground beef
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 can (8 oz) pineapple tidbits in juice, drained, reserving liquid
  • 1/4 cup teriyaki baste and glaze sauce
  • 1 tablespoon cornstarch
  • 2 green onions, sliced (2 tablespoons)
  • 1/4 cup diced red bell pepper, if desired
  • 5 large Bibb lettuce leaves
Instructions:
  • Cook the ground beef in a 10-inch skillet over medium-high heat for 5 to 7 minutes until fully cooked, stirring occasionally. Drain any excess fat and season with salt and pepper.
  • Mix the reserved pineapple liquid, baste and glaze sauce, and cornstarch in a small bowl. Stir this mixture into the ground beef and cook until thick and bubbly, stirring frequently. Add pineapple, green onions, and bell pepper, and cook for 1 to 2 minutes until heated through. Spoon about 1/2 cup of the mixture into each lettuce leaf and roll up to serve.
