Indulge in a homemade teriyaki beef and gyoza bento box for a cozy night in.
Ingredients:
  • 300.00 gm sushi rice, rinsed
  • 1 green onion, thinly sliced
  • 131.25 gm salt-reduced soy sauce
  • 32.50 gm mirin seasoning
  • 53.75 gm caster sugar
  • 2 tsp sesame oil
  • 500g beef rump steak, trimmed, thinly sliced
  • 1 garlic clove, crushed
  • 2cm piece fresh ginger, peeled, finely grated
  • 300g packet frozen chunky prawn gyoza dumplings with pork
  • 46.00 gm vegetable oil
  • 1/4 iceberg lettuce, finely shredded
  • 4 red radishes, trimmed, thinly sliced
  • 1 Lebanese cucumber, thinly sliced diagonally
  • 42.00 gm lemon juice
  • Toasted sesame seeds, to serve
Instructions:
  • In a large saucepan, combine rice and 2 cups of water. Bring to a boil over high heat, then lower the heat and simmer covered for 10 minutes until most of the liquid is absorbed. Remove from heat and let it stand covered for 5 minutes. Stir in the onion before serving.
  • In a jug, mix together soy sauce, mirin, sugar, and sesame oil until the sugar dissolves. Place the steak in a bowl and add garlic, ginger, and 2 tablespoons of the soy mixture. Mix well to combine.
  • Cook the gyoza in a large frying pan with 2 teaspoons of vegetable oil following the instructions on the packet. Once cooked, transfer them to a plate and cover to keep warm.
  • - Heat the final tablespoon of vegetable oil in a pan over medium-high heat. Cook the beef, stirring, for 3 to 4 minutes until browned and cooked through. Transfer to a bowl and cover to keep warm. Pour the rest of the soy mixture into the pan. Simmer over medium-low heat for 2 to 3 minutes until the sauce slightly thickens.
  • In a bowl, mix lettuce, radish, and cucumber. Drizzle with lemon juice and the rest of the vegetable oil. Toss to evenly coat. Arrange rice, beef, gyoza, and salad in serving dishes. Sprinkle with sesame seeds and serve with dipping sauce.
