Quick and flavorful Asian mushroom noodle dish.
Ingredients:
  • 42.00 gm soy sauce
  • 40.00 ml dry sherry
  • 14.40 gm honey
  • 1 garlic clove, crushed
  • 3cm-piece fresh ginger, peeled, shredded
  • 400g beef rump steak, excess fat trimmed, thinly sliced
  • 18.20 gm peanut oil
  • 150g oyster mushrooms, halved
  • 100g shiitake mushrooms, thickly sliced
  • 100g enoki mushrooms, trimmed
  • 270g pkt soba noodles
  • 1/2 bunch watercress, sprigs picked
Instructions:
  • In a bowl, mix soy sauce, sherry, honey, garlic, and ginger. Add beef and toss until coated. Refrigerate for 30 minutes to marinate.
  • Remove beef from marinade and gently dry it with paper towels. Heat 1/2 teaspoon of oil in a frying pan over medium-high heat, then stir-fry the first batch of beef for 2 minutes until browned. Transfer to a bowl and repeat with the remaining beef. Cover with foil.
  • After cooking the oyster mushrooms, use a paper towel to wipe the pan clean. Heat 1 teaspoon of the leftover oil in the same pan over medium-high heat. Stir-fry the oyster mushrooms for 2 minutes, then transfer to a bowl. Next, stir-fry the shiitake mushrooms in the same pan with 1 teaspoon of oil. Finally, stir-fry the enoki mushrooms in the pan with the remaining oil until tender, for about 30 seconds.
  • While the noodles are cooking, follow the instructions on the packet. Once cooked, drain the noodles and portion them into serving bowls.
  • Place the beef and mushrooms in the pan over medium-high heat until warmed. Add the watercress, toss everything together, and then serve over the noodles.
