Beef, veggie and soba noodle stir-fry

Make a quick and delicious beef stir fry with soba noodles and fresh vegetables.
Ingredients:
  • 500g beef rump steak, fat trimmed, thinly sliced
  • 27.60 gm vegetable oil
  • 1 red onion, thinly sliced into wedges
  • 3cm fresh ginger, grated
  • 1 medium carrot, peeled, cut into matchsticks
  • 115g fresh baby corn, halved
  • 175g sugar snaps
  • 100g shitake mushrooms, sliced
  • 1 bunch gai lan (Chinese broccoli), cut into 5cm lengths
  • 400g wok-ready soba noodles, separated
  • 76.25 gm oyster sauce
  • 42.00 gm light soy sauce
  • 125ml beef stock
  • Coriander sprigs, to serve
  • Sliced chilli, to serve
Instructions:
  • In a hot wok, sizzle ½ tablespoon of oil. Quickly sear the beef in two batches for 1 to 2 minutes until beautifully browned. Transfer the beef to a plate, keeping it warm, and reheat the wok before the next batch.
  • Heat wok with remaining oil over high heat. Stir-fry onion and ginger for 1 minute. Add carrot, corn, sugar snaps, mushrooms, and gai lan stems, stir-fry for another minute. Toss in gai lan leaves, stir-fry for an additional minute.
  • Add the noodles to the wok and stir-fry for 1 to 2 minutes until they are warmed through. Put the beef back in the wok, pour in the sauces and stock, and toss everything together until heated through. Serve right away, garnished with coriander and chili if desired.
