Try this refreshing chilled prawn noodle dish for a cool summer meal.
Ingredients:
  • 270g packet soba noodles
  • 1 nori sheet
  • 24 medium cooked prawns, peeled, tails intact, deveined
  • 1 green onion, thinly sliced
  • 2 avocados, thinly sliced
  • 2 Lebanese cucumbers, peeled into ribbons
  • 40.00 ml rice wine vinegar
  • 24.00 gm white miso paste
  • 21.00 gm soy sauce
  • 10.00 gm caster sugar
  • 2cm piece fresh ginger, finely grated
Instructions:
  • Prepare noodles according to package instructions. Drain and rinse with cold water before transferring to a large bowl.
  • Prepare the Miso dressing by whisking vinegar, miso paste, soy sauce, sugar, and ginger until fully blended.
  • Cut the nori sheet into 4 squares using scissors, stack them, and then cut into thin strips.
  • Combine prawns, onion, and dressing with noodles. Toss until fully mixed. Add nori and avocado, gently toss to combine. Divide into bowls, top with cucumber, and serve.
