Indulge in a gourmet prawn and avocado salad to kick off your festive meal.
Ingredients:
  • 20 Deli Thawed Cooked Large Black Tiger Prawns, peeled, tails intact, deveined
  • 12 asparagus spears, halved, blanched, refreshed
  • 3 radishes, thinly sliced
  • 2 avocados, chopped
  • 500.00 ml picked watercress leaves
  • 1 baby fennel, very thinly sliced (using a mandoline)
  • 100ml extra virgin olive oil
  • 42.00 gm lemon juice
  • 200g aioli (garlic mayonnaise)
Instructions:
  • Combine prawns, asparagus, radish, avocado, watercress, and fennel in a bowl, gently mixing them together.
  • Combine oil and lemon juice, then season to taste. Spread 1 tablespoon of aioli on serving plates, top with salad, drizzle with dressing, and serve.
