Revived classic prawn cocktail in a refreshing salad.
Ingredients:
  • 1/2 rockmelon, peeled, seeded, quartered
  • 1 large avocado, halved, peeled, stone removed, thinly sliced
  • 24 medium cooked prawns, peeled leaving tails intact, deveined
  • 36.40 gm extra-virgin olive oil
  • 40.00 ml white balsamic vinegar
  • Fresh mint sprigs, to serve
  • Lemon wedges, to serve
Instructions:
  • Combine peppery arugula, sweet rockmelon wedges, and delicate shaved ham for a flavorful and refreshing salad.
  • Sprinkle feta on top and generously drizzle with olive oil and balsamic vinegar. For simple canapés, slice crusty bread into small pieces and layer with blue cheese, rockmelon, and prosciutto.
