Delicious prawn, prosciutto, and rockmelon salad.
Ingredients:
  • 42.00 gm fresh lime juice
  • 1 rockmelon, halved, deseeded, peeled, each half cut into 9 wedges
  • 18 cooked king prawns, peeled leaving tails intact, deveined
  • 12 thin slices prosciutto
  • 1 small bunch basil, leaves picked, leaves torn
  • 60ml (1/4 cup) extra virgin olive oil
  • Salt & freshly ground black pepper
Instructions:
  • Assemble the cantaloupe, shrimp, prosciutto, and basil on individual serving plates.
  • Mix the oil and lime juice together in a small bowl. Drizzle the dressing over the salad, then season with salt and pepper before serving immediately.
