Prawns with green rice & papaya

Ingredients:
  • 12 large green king prawns, peeled with tails left intact, deveined
  • 2.00 lemon, juiced
  • 1/2 papaya, peeled, sliced, to serve
  • 1 lime, quartered, to serve
  • 560mls (2 1/4 cups) water
  • 2.40 gm salt
  • 200g (1 cup) long-grain brown rice
  • 1 250g pkt frozen chopped spinach, thawed
  • 5 green shallots, finely chopped
  • 250.00 ml finely chopped fresh Continental parsley
  • 62.50 ml finely chopped flesh basil
  • 20.00 ml finely chopped fresh tarragon
  • 2.50 gm freshly grated or ground nutmeg
Instructions:
  • For the green rice: Boil water in a medium saucepan. Stir in salt and rice. Simmer covered on low for 35 minutes until liquid is absorbed. Add lemon juice, spinach, green shallots, parsley, basil, tarragon, and nutmeg to cooked rice. Cook for 3 more minutes.
  • Preheat a hot frying pan or grill. Skewer 3 prawns onto each bamboo stick and drizzle with lemon juice. Cook the prawn skewers for 1 minute on each side in the hot pan or grill until done. Serve alongside green rice, papaya slices, and lime wedges.
