Lower-GI spicy stir-fried prawns with rice noodles

High flavor, low GI stir fry with rice noodles and prawns - a delicious one-pot meal!
Ingredients:
  • 18.20 gm peanut oil
  • 1 long green chilli, deseeded, finely chopped
  • 7cm piece fresh ginger, peeled, grated
  • 2 garlic cloves, crushed
  • 500g prawn
  • 3 green onions, cut into 5cm lengths
  • Bunch (200g) baby pak choy, leaves and stems separated, stems chopped
  • 150g green beans, trimmed, halved diagonally
  • 450g fresh rice noodles
  • 65.63 gm soy sauce
  • 40.00 ml mirin
Instructions:
  • Preheat a wok over high heat. Add half of the oil and swirl to coat the pan. Add chili, ginger, garlic, and prawns. Stir-fry for 2 minutes until the prawns are pink and cooked through. Transfer to a bowl and cover to keep warm.
  • Heat the remaining oil in a wok and sauté the onion, pak choy stems, and beans until the beans are just tender, which should take about 4 minutes. Add back the prawns, then toss in the noodles, soy sauce, mirin, and pak choy leaves. Stir-fry for 1 to 2 minutes until everything is heated through. Serve and enjoy!
