"Spicy garlic soy marinated steak with stir-fried eggplant for a delicious winter dish."
Ingredients:
  • 62.50 ml rice wine vinegar
  • 40.00 ml sesame oil
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 1 long red chilli, finely chopped
  • 3 garlic cloves, crushed
  • 2 (300g each) eggplants
  • 400g beef rump steak, trimmed
  • 1 eschalot, thinly sliced
  • 100g dried rice stick noodles
  • 1 bunch bok choy, trimmed, halved lengthways
  • Rice bran oil spray
  • 1.50 gm sesame seeds, toasted
  • Fresh coriander leaves
  • Long red chilli, sliced, extra, to serve
Instructions:
  • In a small bowl, mix together vinegar, sesame oil, sugar, soy sauce, chili, and garlic.
  • Cut each eggplant into 8 wedges and place them in a large snap-lock bag. Pour 1/4 cup of vinegar mixture into the bag, seal it, and rub to coat the eggplant. Place the steak in a separate snap-lock bag and add 1/4 cup of the remaining vinegar mixture. Refrigerate the eggplant and steak for 1 hour, if time allows. Add eschalot to the remaining vinegar mixture to make the dressing and set aside.
  • Boil noodles in a saucepan for 5 minutes until tender, then drain and cover to keep warm.
  • Heat a chargrill pan over medium-high heat. Lightly spray bok choy with oil and place cut-side down on the pan. Cook for 1 to 2 minutes on each side until lightly charred. Transfer to a plate and cover to keep warm.
  • Take the steak out of the marinade and cook for 3 minutes on each side for a medium doneness or to your preferred level. Place it on a plate, cover with foil, and let it rest for 5 minutes before serving.
  • Remove the eggplant from the flavorful marinade and grill each side for 2 to 3 minutes until perfectly tender.
  • Slice the steak thinly. Place noodles, bok choy, sliced steak, and eggplant on a platter. Drizzle with dressing and sprinkle with sesame seeds, coriander, and extra chilli. Serve.
