Delicious chargrilled laksa chicken with cashew rice featuring tender chicken breast and zesty laksa paste for a quick and easy dinner.
Ingredients:
  • 4 Australian Chicken Breast Fillets
  • 150g laksa paste
  • 200g broccoli, cut into florets
  • 2 x 250g pkts microwavable brown, red & wild rice mix
  • 60g pkt Baby Spinach
  • 125.00 ml chopped flat-leaf parsley
  • 25g shredded coconut
  • 20.00 ml sesame oil
  • 100g cashew
  • 1 long red chilli, thinly sliced (optional)
Instructions:
  • Mix the chicken with half of the laksa paste in a medium glass or ceramic dish.
  • 1. Preheat a chargrill over medium heat. 2. Spray the chicken with olive oil. 3. Grill the chicken for 3 minutes on each side until browned. 4. Brush the top with some laksa paste, flip and cook for 1 minute. 5. Repeat with the remaining laksa paste. 6. Cook for 1 more minute until done. 7. Transfer to a plate, cover with foil, and let it rest for 5 minutes. 8. Slice the chicken thickly before serving.
  • Cook the broccoli in a large saucepan of boiling water for 2-3 minutes until vibrant green and tender. Drain well.
  • Cook rice according to package instructions, then transfer to a large bowl. Mix in spinach, broccoli, parsley, coconut, oil, and cashews. Stir well to combine and season to taste.
  • Plate the rice mixture, distribute the chicken on top, and add a sprinkle of chili, if desired.
