Chargrilled capsicum and chorizo tartlets

Spicy chorizo sausage elevates these irresistible canapes.
Ingredients:
  • 2 sheets shortcrust pastry, thawed
  • 2 eggs, lightly beaten
  • 83.33 gm thickened cream
  • 150g chorizo
  • 120g chargrilled red capsicum, shredded
  • 1/2 small red onion, finely chopped
Instructions:
  • Preheat your oven to 200°C. Lightly grease 16 patty pan holes (1 1/2-tablespoon capacity). Cut out 16 rounds from pastry sheets using a 7cm fluted round cutter, then press them into the patty pan holes.
  • In a bowl, mix eggs, cream, sausage, capsicum, and onion. Season with salt and pepper. Fill pastry shells with the mixture and bake until golden and filling is set, about 10 to 12 minutes. Serve hot.
