Chargrilled eggplants with feta

Whip up a quick and delicious eggplant salad with a delightful mix of flavors.
Ingredients:
  • 4 baby eggplants, halved lengthways
  • 18.20 gm olive oil
  • 3 tsp balsamic dressing
  • 30g feta, crumbled
  • 40.00 ml pomegranate seeds (see note)
  • 40.00 ml fresh mint leaves
Instructions:
  • Heat up a chargrill or barbecue grill over medium heat.
  • Brush the eggplants with oil, season, and grill for 8-10 minutes per side until tender and charred. Serve on a plate, drizzle with dressing, and top with feta, seeds, and mint.
