Chargrilled vegetables with feta and mint

Delightful vegetable side dish perfect for a barbecue feast.
Ingredients:
  • 2 zucchini, trimmed, quartered lengthways
  • 2 baby eggplant, trimmed, quartered lengthways
  • 8 green onions, trimmed, cut into 5cm lengths
  • 2 garlic cloves, crushed
  • 1 small lemon, juiced
  • 18.20 gm extra-virgin olive oil
  • 50g feta, crumbled
  • 40.00 ml mint leaves
Instructions:
  • In a ceramic dish, combine zucchini, eggplant, onions, and garlic. Drizzle with olive oil and sprinkle with salt and pepper. Toss to coat evenly.
  • Preheat a barbecue grill or chargrill pan over medium-high heat. Grill zucchini, eggplant, and onions, turning occasionally, until charred and tender, about 7 to 10 minutes. Transfer to a serving dish.
  • In a jug, whisk together 1 tablespoon lemon juice, extra-virgin olive oil, salt, and pepper. Drizzle the mixture over the vegetables, then sprinkle with feta and mint before serving.
