Create a quick and nutritious meal by searing tuna, tossing with soba noodles, and drizzling with spicy dressing.
Ingredients:
  • 18.40 gm sunflower oil
  • 400g centre-cut sashimi-grade tuna (see note)
  • 70.00g sesame seeds
  • 200g soba noodles (see note)
  • 250.00 ml podded soy beans (edamame) (see note)
  • 1 Lebanese cucumber, cut into wedges
  • 1 punnet snow pea sprouts, trimmed
  • 1 avocado, sliced
  • 4 spring onions, sliced on an angle
  • Pickled ginger (see note), to serve
  • 10.00 gm caster sugar
  • 1 tsp wasabi paste (see note)
  • 80ml ponzu
  • 40.00 ml mirin (Japanese rice wine) (see note)
  • 12.20 gm fish sauce
  • Juice of 1 lime
Instructions:
  • In a hot frypan, sear the tuna in oil for 1 minute on each side to keep it rare inside. Let it cool a bit before serving.
  • Roll the cooled tuna in sesame seeds on a clean board until completely coated. Wrap the tuna tightly in plastic wrap, twisting the ends to secure, and chill in the fridge for 30 minutes.
  • In a bowl, mix all dressing ingredients and set aside.
  • Cook the noodles as directed on the package, adding the beans during the last minute of cooking. Drain and rinse with cold water.
  • Take the tuna out of the fridge and slice it to a thickness of 5mm. Combine the noodles and soybeans with the cucumber, sprouts, avocado, spring onion, and dressing. Serve on plates, then layer with tuna slices and decorate with pickled ginger.
