Whip up a vibrant Asian ginger salad in minutes!
Ingredients:
  • 300g piece sashimi-grade tuna fillet, halved lengthways into 2 logs
  • Sunflower oil, to brush and shallow-fry
  • 36.00 gm black sesame seeds (see note) or white sesame seeds
  • 5cm piece ginger, thinly shredded
  • 1 long red chilli, seeds removed, cut into matchsticks
  • 8.00 gm brown sugar
  • 12.20 gm fish sauce
  • 42.00 gm lime juice
  • 1 long green chilli, thinly sliced on an angle
  • 62.50 ml fresh coriander
  • 62.50 ml fresh mint leaves
Instructions:
  • 1. Preheat a frypan over high heat until sizzling. Brush tuna with a light coating of oil and sear each side for 20 seconds until lightly golden but still rare in the center. 2. Coat the tuna logs in sesame seeds and wrap them tightly in plastic wrap. 3. Place the wrapped tuna in the freezer for 30 minutes.
  • Heat 2-3cm of oil in a clean pan over medium heat. Fry three-quarters of the ginger and red chili until crisp, about 30 seconds. Drain on paper towel.
  • Combine sugar, fish sauce, and lime juice in a bowl. Mix in green chilli, herbs, raw ginger, and red chilli. Toss together. Slice tuna, arrange on plates with salad, and top with crisp ginger and chilli.
