Quick and delicious dish ready in just 10 minutes, ideal for busy days and nights!
Ingredients:
  • 180g Organic Soba Noodles
  • 500.00 ml baby kale leaves
  • 80ml (1/3 cup) rice wine vinegar
  • 60ml (1/4 cup) light soy sauce
  • 10.00 gm caster sugar
  • 2 tsp fresh ginger, finely grated
  • 1 tsp sesame oil
  • 150g hot smoked salmon, flaked
  • Sesame seeds, toasted, to serve
Instructions:
  • Boil the soba noodles for 1 minute in a large saucepan. Add baby kale leaves and cook for 30 seconds until wilted. Drain and transfer to a bowl.
  • Mix the rice wine vinegar, soy sauce, sugar, ginger, and sesame oil in a small jug. Pour over the noodles and toss until evenly coated.
  • Top the noodles with the flaked salmon, then generously sprinkle with sesame seeds for a delightful finish.
