Speedy coconut lime salmon parcels - a fresh, flavorful combo of juicy veggies and salmon in every bite!
Ingredients:
  • 1 zucchini, thinly sliced crossways
  • 1 red capsicum, seeded, thinly sliced
  • 4 Tasmanian Skinless Salmon Portions
  • 165ml can coconut milk
  • 12.20 gm fish sauce
  • 16.00 gm Brown Sugar
  • 1 lemongrass stem, pale section only, finely chopped
  • 450g pkt long-grain microwavable rice
Instructions:
  • 1. Preheat your oven to 220°C. 2. Cut four 30cm squares of baking paper and four 30cm squares of foil. 3. Layer the baking paper over the foil. 4. Divide the zucchini and capsicum evenly among the baking paper squares. 5. Place a piece of salmon on top of each vegetable pile. 6. In a bowl, mix together the coconut milk, lime juice, fish sauce, sugar, and lemongrass until combined. 7. Pour the coconut milk mixture evenly over the salmon and vegetables.
  • Fold 2 sides of the foil and baking paper together tightly, then fold over twice. Seal the ends to enclose the filling. Transfer to a baking tray and bake for 8-10 minutes until the salmon is perfectly cooked.
  • Cook the rice according to the instructions on the packet.
  • Season the salmon to perfection, then elegantly plate it alongside a generous portion of fluffy rice.
