Salmon and avocado ceviche

Luscious avocado complements zesty lime and spicy chili in this upscale salmon ceviche.
Ingredients:
  • 4 (about 800g) salmon fillets, skin removed, cut into 2cm pieces
  • 60ml lime juice
  • 1 long red chilli, seeded, finely chopped
  • 2 kaffir lime leaves, finely shredded
  • 2 ripe avocados, halved, stoned, peeled, cut into 2cm pieces
  • 36.80 gm avocado oil (see note), plus extra to drizzle
  • 62.50 ml chopped coriander
  • Ciabatta bread, sliced, toasted, to serve
  • Lime wedges, to serve
Instructions:
  • Marinate the salmon in lime juice, chili, and kaffir lime leaves in a large glass or ceramic bowl in the fridge for 30 minutes.
  • Gently mix the avocado, oil, and coriander into the salmon mixture. Season with salt and pepper to taste.
  • Divide the ceviche onto plates. Drizzle with more avocado oil. Enjoy right away with toasted ciabatta and lime wedges, if preferred.
