Salmon and avocado sushi sandwiches

Delicious salmon and avocado sushi sandwiches from taste.com.au and Sunrice.
Ingredients:
  • 540g rice
  • 935ml water
  • 60ml rice vinegar
  • 20.00 gm caster sugar
  • 4 sheets nori
  • 100g smoked salmon
  • 1/2 just ripe avocado, thinly sliced
  • 40.00 ml pickled ginger
  • Soy sauce, to serve
  • Wasabi paste, to serve
Instructions:
  • Rinse the rice in a sieve under cold running water until the water runs clear to remove excess starch. Cook the rice with water in a large covered saucepan over high heat until boiling. Reduce heat to low and cook for 12 minutes until water is absorbed. Remove from heat and let it sit covered for 10 minutes to cool slightly before serving.
  • In a small bowl, mix vinegar, sugar, and salt. Transfer rice to a large glass bowl. Use a wooden paddle to break up rice lumps while slowly adding the vinegar mixture, gently folding to combine. Keep folding and fanning the rice for 15 minutes until cool.
  • Lay nori sheets, shiny-side down, on a clean work surface. With damp fingers, evenly spread a quarter of the rice on each sheet. Top 2 of the sheets with smoked salmon, avocado, and ginger.
  • Cover the salmon with the remaining nori sheets, rice-side down, and firmly press down. Cut each sheet into quarters, then cut each quarter in half diagonally to form 2 triangles. Repeat for the remaining sushi sandwiches. Enjoy with soy sauce and wasabi.
