Sweet Potato (Kumara) Wedges

Deliciously spiced kumara sweet potato wedges baked to perfection, inspired by a New Zealand recipe that can also be made with regular potatoes.
Ingredients:
  • 2 teaspoons vegetable oil
  • 0.25 cup all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon mustard powder
  • 1 pinch salt
  • 0.5 teaspoon ground black pepper
  • 4 large sweet potatoes, cut into wedges
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) while generously drizzling a medium baking sheet with vegetable oil.
  • Combine flour, paprika, mustard powder, salt, and pepper in a large resealable plastic bag. Add sweet potato wedges and shake well to coat evenly.
  • Place the sweet potato wedges on the baking sheet and bake in the preheated oven for 20-30 minutes until they turn golden brown and crispy.
