Sweet potato chips & red onion wedges

Savory-sweet sweet potato and onion side dish pairs perfectly with crispy fish.
Ingredients:
  • 1 (about 600g) orange sweet potato (kumara), peeled, cut into 2cm batons
  • 2 red onions, halved, cut into wedges
  • 18.40 gm vegetable oil
  • Fresh continental parsley leaves, to garnish
Instructions:
  • Preheat your oven to 230C. Line 2 baking trays with non-stick baking paper. Divide the sweet potato between one tray and the onion onto the other tray. Drizzle oil over the sweet potato and onion, then toss to coat evenly.
  • Place the sweet potato on the top oven shelf and the onion on the bottom. Bake until golden brown and tender, about 20 minutes. Remove from oven.
  • Garnish with fresh parsley and serve promptly.
