Crispy golden chips with a delightful balance of salty and sweet flavors, perfect for adding a satisfying crunch to any meal.
Ingredients:
  • 450g small orange sweet potatoes (kumara), peeled
  • Vegetable oil, to deep-fry
  • Sea salt
Instructions:
  • 1. Use a vegetable peeler to slice the sweet potatoes into thin ribbons lengthways. 2. Line a large baking tray with 2 layers of paper towel. 3. In a large saucepan, add enough oil to reach one-third of the way up the side of the pan. 4. Heat the oil to 180°C over medium-high heat. You'll know it's ready when a cube of bread turns golden brown in 15 seconds.
  • Add a quarter of the sweet potato slices to the pan and fry until crisp, about 1 minute. Use tongs to transfer the cooked slices to the lined tray. Repeat with the remaining sweet potato slices in three more batches, making sure to reheat the oil between each batch.
  • Transfer the chips to a spacious serving bowl, sprinkle with sea salt, and enjoy!
