Crispy sweet potato wedges with flavorful spices - the perfect side dish for any meal!
Ingredients:
  • 3 medium sweet potatoes (1 lb), peeled, cut into 2-inch wedges
  • 1 tablespoon olive oil
  • 2 teaspoons chopped fresh thyme leaves
  • 1/2 teaspoon kosher (coarse) salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon ground red pepper (cayenne)
  • 1/4 cup shredded Parmesan cheese (1 oz)
Instructions:
  • Preheat the oven to 450°F. Arrange sweet potato wedges on a baking sheet without greasing it. Drizzle with oil and toss with thyme, salt, black pepper, and red pepper until evenly coated.
  • Roast for 30 minutes, flipping halfway through, until golden and tender. Finish off with a generous sprinkle of cheese.
