Roasted sweet potato wedges with rosemary-orange brown butter - a perfect holiday side or appetizer!
Ingredients:
  • 4 small sweet potatoes
  • 0.125 teaspoon black pepper
  • 2 tablespoons butter
  • 2 teaspoons fresh rosemary, finely chopped
  • 2 teaspoons orange zest
Instructions:
  • Preheat your oven to 450 degrees F (230 degrees C) and generously grease a baking sheet with oil.
  • Slice sweet potatoes (unpeeled) into 1/2-inch wedges and lay them flat on the baking sheet. Drizzle with oil, then sprinkle with salt and pepper for flavor.
  • Roast until beautifully browned and tender, stirring midway through, for about 30 minutes. Transfer to a spacious bowl.
  • Heat butter in a small skillet over medium heat until melted and golden brown, about 5 minutes. Add rosemary and orange zest, then pour over sweet potato wedges, tossing to coat.
