Sweet potato wedges with seeds and yoghurt

Energizing sweet potato wedges with seeds and yogurt - perfect for active kids!
Ingredients:
  • 800g sweet potato, cut into thick wedges
  • 18.20 gm olive oil
  • Sea salt
  • 1.50 gm sesame seeds
  • 20.00 ml sunflower seeds
  • 20.00 ml pumpkin seeds (pepitas)
  • 62.50 ml Greek style yoghurt
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to a toasty 220°C (200°C for fan-forced ovens) and prepare a large baking tray by lining it with baking paper.
  • Transfer the sweet potato to a baking tray, coat with a generous drizzle of oil, and mix well. Sprinkle with sea salt. Roast in the oven for 35-40 minutes until beautifully golden and soft, remembering to flip halfway through cooking for even browning.
  • Sprinkle sweet potato wedges with seeds, and enjoy with Greek yogurt and lemon wedges on the side.
