Roasted sweet potato wedges

Indulge in this vitamin-rich sweet potato side for a healthier twist.
Ingredients:
  • 54.60 gm olive oil
  • 1.80 gm salt
  • 1/4 tsp freshly ground black pepper
  • 900g sweet potatoes
Instructions:
  • Preheat the oven to 200C (180C fan-forced) with the rack placed in the lower third. Place a large baking tray in the hot oven for 10 minutes to preheat.
  • In a large bowl, mix the oil, salt, and pepper. Peel the sweet potatoes, cut them into wedges that are 2-2.5cm thick lengthways, and coat them in the oil mixture to prevent discoloration.
  • Place the sweet potato wedges on the hot tray, cut-side down in a single layer, ensuring the largest wedges are in the corners for intense heat exposure.
  • Roast the sweet potato wedges on the lower oven rack for 20 minutes until golden brown. Using a metal spatula, flip the wedges, rearranging darker pieces to the center and lighter ones to the edges. Roast for another 5 minutes until golden and soft.
