Spiced chicken with couscous

Quick and delicious meal ready in under 20 minutes.
Ingredients:
  • 20.00 gm ground cumin
  • 40.00 ml ground coriander
  • 10.00 gm sweet paprika
  • 3 tsp ground turmeric
  • 3 (about 250g each) single chicken breast fillets
  • 18.20 gm olive oil
  • 290g (1 1/2 cups) couscous
  • 20g butter
  • 375ml (1 1/2 cups) boiling water
  • 1 red capsicum, halved, deseeded, finely chopped
  • 4 green shallots, ends trimmed, thinly sliced
  • 62.50 ml loosely packed coarsely chopped fresh coriander
  • Natural yoghurt, to serve
  • Lemon wedges, to serve
Instructions:
  • In a small bowl, mix together the cumin, ground coriander, paprika, and turmeric. Season with salt and pepper. Coat the chicken evenly with the spice mixture. Heat oil in a large non-stick frying pan over medium heat. Cook the chicken for 5 minutes on each side until it's fully cooked. Transfer to a plate, cover with foil, and let it rest for 5 minutes before serving.
  • In a heatproof bowl, combine couscous and butter. Pour boiling water over the mixture while stirring with a fork. Cover and let sit for 5 minutes until liquid is absorbed. Fluff the couscous with a fork, then mix in capsicum, half the green shallot, and coriander. Season with salt and pepper to taste.
  • Slice the chicken thinly against the grain. Divide the couscous among serving bowls and layer with chicken slices. Top with the remaining green shallot. Serve right away with optional yoghurt and lemon wedges.
