A must-have weeknight dinner with delicious flavors.
Ingredients:
  • 3 lemons
  • 8 (about 1 kg) chicken drumsticks (with skin)
  • 1 tsp ground turmeric
  • 2.50 gm sweet paprika
  • 18.20 gm olive oil
  • 500g pkt couscous
  • Boiling water
  • 280g (2 cups) frozen peas
  • 20g (1 tbsp) butter or margarine, melted
  • 2 tsp finely chopped fresh mint
Instructions:
  • Cut 1 lemon in half and use one half to rub the chicken drumsticks. Mix turmeric and sweet paprika, then coat the chicken drumsticks evenly with the spice mixture.
  • In a large frying pan over medium heat, sizzle those chicken drumsticks in olive oil until golden, turning occasionally, for about 6-8 minutes. Squeeze the juice from two whole lemons into the pan. Lower the heat to medium-low, cover, and let it simmer for about 15-18 minutes until the chicken is fully cooked. Give those drumsticks a occasional turn to soak up all the tangy goodness.
  • Next, put the couscous in a heat-resistant bowl and mix in 500mls (2 cups) of boiling water while stirring gently. Cover and let sit for 5 minutes until all the liquid is absorbed. Fluff the couscous with a fork to separate the grains. In another small heat-resistant bowl, cover the peas with boiling water and let sit for 1-2 minutes to warm up. Drain the peas. Combine the peas and butter or margarine with the couscous. Slice the remaining 1/2 lemon and serve with the chicken and couscous, topped with mint.
